What to do with Thanksgiving Leftovers

According to the National Turkey Federation (yes, this really is a thing) 88% of Americans surveyed eat turkey on Thanksgiving. You'll find lots of "talkin' turkey" facts and recipes on the organization's web site

That's a lot of turkey . . . and a whole lot of leftover turkey carcasses, necks, wings, legs and, well, you get the idea.

ReFED Predicts More Than 300 Million Pounds of Food Will Go To Waste This Thanksgiving

Let's stop the waste and challenge ourselves to use up as much leftover food from our Thanksgiving meal as possible!

For starters we can put the carcass (and odd parts) to good use by making turkey stock/broth that can be the beginnings of a great turkey soup. Check out this recipe at Spend with Pennies: Turkey Stock Broth

You can take it a step further and reuse the carcass and a bunch of leftover vegetables — including mashed potatoes — to make a delicious turkey soup. Check out the recipe for Next Day Turkey Soup at The Food Network: Next-Day Turkey Soup with Mashed Potato Polpetti
